Our Pitmaster’s story begins in Oklahoma, where barbecue isn’t just food-it’s a way of life. Surrounded by the smell of smoke and warmth of family and friends, he learned early that great barbecue brings people together.
What started as a simple family tradition grew into a lifelong passion and craft. For him, being a Pitmaster isn’t just about cooking-it’s about patience, pride, and doing things the right way. Every brisket, rib and pork butt tells its own story, because no two meats cook the same. Some take 10 hours, some take 18 hours, but it’s the goal of perfection that is expected for every cut.
We stay true to the roots of authentic Texas style barbecue. We do things the hard way-long cooks on wood burning offset smokers, no shortcuts, no gimmicks. We take the time and do it right and that is something we are proud of. It’s the dedication to the process that makes every bite worth it.
Even through the heart of a Wisconsin winter, you’ll find him by the pit-watching the smoke roll, adjusting the fire, and letting the meat tell him when it’s ready. He believes in keeping things simple: quality meat, simple seasoning, and honest smoke.
For our Pitmaster, barbecue isn’t about awards or recognition. It’s about sharing something real-food made with time, care, and heart. It’s about gathering around the table with friends and family, creating memories that last long after the plates are cleared.
